Any idea when it might come out? I feel like they may rush it to get it out while the first is still recent. Probably early 2016.

I've heard Spring 2016, but it could be delayed/canceled now that Hogan is out of WWE.

More than likely March or April like the last two because it ties into Wrestlemania, which is always in either of those months depending on how the yearly calender is and when they can book a big arena.
Historically though I really doubt they'd postpone it unless it's still early enough. They've let people stay in tie-in media many times. Though it may seem strange, it's far more often their tie-in media is out of date more than it ever is up to date.

That's interesting, but it may depend on how relevant it is to the game. If he was just another character, then it may have been easier.
However I will remind all you, CM Punk left WWE in late January of 2014, and was still in the Flintstones movie that came out in March of 2015. So it may not be that easy to get rid of Hulk Hogan who is out of WWE in July 2015, from something probably coming out in March of 2016. When it's six months less time than they could have had to deal with the last one and didn't do anything about it.
EDIT: Looking it up the Flintstones one apparently was recorded in 2013, but I don't think it was that long (or was it) between when we heard about Kiss recording for Scooby Doo? So I guess it's really going to come down to the details of how far or not they are.
EDIT EDIT: It was May of 2014 we had heard Kiss recorded for Scooby and it didn't come out until July of 2015. So yeah it might be too late.
EDIT EDIT EDIT: Apparently there was also a live action movie WWE Studios had him in. Which according to sources they are discussing if possible to edit around him or if they can feasibly reshoot. So by that wording it might very well be the case of IF they can edit around or in this case i suppose the words are re-draw and re-record someone over top of the Hulkster. If it's that case, there are plenty of roster members and legends on contract for them to pick from.

While I don't consider PWInsider a usually reliable source. Their news update on this is as follow:
"PWInsider reports that a piece of Hogan material was also in the upcoming WWE – Scooby Doo animated movie. Hogan was set to appear in scenes alongside an animated Dusty Rhodes and those will obviously have to be edited now. Hopefully they can just replace Hogan and not have to nix the Dusty scene altogether."
Given that Dusty Rhodes recently passed, i'd be more willing to bet they'd (if they have to) push it back to swap someone in for Hogan to keep that Dusty material in.

It mentioned Hulk Hogan. They deleted everything on their website except the title history that mentioned him.
The way some reports originally mentioned it, made him sound like he was a big part. But the line I mentioned from PwInsider implies more it's a smaller part that can probably be cut easily or taken a little time to edit someone else in Hogan's place.
