Whilst this is a HBO Max show and being billed as Adult, I think it should aim to keep things mostly within the scope of a TV-14 show.
It should be edgy and daring enough to be something new in the franchise — perhaps the show SDMI really wanted to be — but not as extreme as say the newest Harley Quinn show.
TV-14 would still allow the show to have realistic dialogue, a compelling LGBT+ storyline and show actual violence and horror.
I also don’t mind if the show is comic, but I’d like it to be more dark comedy or absurdist, instead of slapstick or parody.

I'm honestly open to quite a bit, as long as it's not inappropriately raunchy, sexual, or super gory. I totally understand and respect that some people may want that, but I don't want that in Scooby personally. I think it should be kept TV-14 as well, but not as extreme as perhaps Harley Quinn or Family Guy. I'd love it to be like Scoobynatural, that was great.

Why would it need to be LGBT+-centered? She never has been, outside a deleted scene in the 2002 live-action and MI.

It doesn't have to be, in fact it shouldn't be centered on her sexual identity (irrespecitve of the orientation they go with) as that is just one part of the story. Her developing sexual identity is just one of the threads that the writers have to weave together into a coherent story.

Ugh, yeah, they never have been too good when things started veering towards defining relationships. In MI, they made it so that Daphne came out as almost bitter Fred wasn't very good at reading her intentions, and Velma was so jealous she was almost acting like Shaggy was doing the nasty with Scooby - it was all so very weird! That said, it just seems weird to me people insist she's gay or bi just because of a stereotype of how she looks. Most of the times she's been depicted in a scene with any romance, it's been towards/with guys. Hell, Scoobynatural came out after MI and she literally threw Sam over her shoulder to kiss him!

Far too many times in these types of shows characters are just made gay to cause stupid and dramatic storylines. I would definitely be ok with her being lesbian in this show but I would prefer it to be her existing as a normal LGBT+ character doing her thing instead of “Who finds out about Velma’s secret and is blackmailing her?!?!” or “Which popular girl did Velma see at the lesbian bar?!?!” Her sexuality is not her story, but it can certainly be a part of it

On what I bolded - Harley Quinn isn't PG 14, so if this show turns out that way it couldn't be as extreme as that.

Violence and gore shouldn't be an issue, given the voice actors and general tone that press releases have hinted at. I don't even expect this to have much action like you'd see in Burn Notice or something. Drama-mystery seems to be the focus, and language is the only thing I see bumping around the content rating.

That's be my guess. I'm feeling like this will be more PG 13 in tone with occasional R Rated language.

It will definitely be interesting to see where they go with the show's tone. I doubt it will be overly gory and violent, and maybe focus more on adult-esque comedy, and possibly a more adult horror tone? Assuming it's a mystery series (not sure if this was confirmed), they could lean into the scarier side of things with a more adult focus, and I think that could be interesting.
