Watching the new episodes of Jellystone! that premiered on HBO Max last week (I'm still not finished with them). While Scooby doesn't appear, there have been a few allusions-
In "Bleep", Scrappy's face can be seen on a milk carton. Kinda like those "missing persons" ads I guess, I'm not sure if they still do stuff like that.
In "The Big Stink", Augie Doggie & Doggie Daddy have been watching all of the Scooby-Doo episodes, they mention something about there being over 5,000 episodes I think. No actual footage from the show can be seen, but some music from the classic series is heard briefly. At the end of the episode, Auggie talks with Daddy on the phone and tells him she just watched the episode where the culprit was Old Man Jenkins.

SCP is a gigantic fanfiction universe with a premise similar to Men in Black. This file made me smile: scp.karagory.com/scp-k9-j-exA quote from it: "Incident K9-J-D: Agent Mu 4-1 was able to convince Agents Mu 4-4 and 4-5 to act as "bait" utilizing [REDACTED]. In a recent Family Guy episode, "First Blood", Peter and his friends are chased by a bear who turns out to be Mayor Wild West in disguise. After they unmask him, this bit follows-
Peter: Old Man West? The owner of the ranch? Quagmire: Peter, this isn't Scooby-Doo. Joe: You ever notice how most Scooby-Doo villains are small businessmen? Who doesn't like small businessmen? Odd choice by the creators.
